Cream of Broccoli Soup Recipe (WITHOUT THE CREAM!)

I must admit, I did not make this soup… but my boyfriend did!

I told him I wanted to purchase an immersion blender to make butternut squash soup, and I came home not only to a new immersion blender but a delicious non-dairy ‘spur of the moment’ cream of broccoli soup! Trust me, I have no idea how I manifested a guy who cooks (…maybe I’m rubbing off on him? Doubt it…) THANK YOU UNIVERSE! I’LL TAKE IT! :-)

What I love most about this soup is that it is SO good for you. Seriously. Like, SO GOOD. I don’t know how else to explain it. This creamy delicious soup contains some of the top healthiest and most functional foods on the planet, such as broccoli, turmeric, ginger, miso, and garlic… All in one (heaping) spoonful. Also, don’t be fooled by the word ‘creamy’. There is not one ounce of dairy in this soup, making it completely vegan and easily digestible.

Ingredients

2 TBSP extra virgin olive oil

1 C chopped onion

2 C vegetables stock

sea salt

3 cloves smashed garlic

2-inch cube ginger, chopped

freshly ground black pepper

1 C crimini mushrooms

2 medium sweet potatoes, chopped in small cubes

6 C broccoli florets

1 tsp turmeric (fresh or granulated)

1 TBSP organic red miso

1/3 C coconut milk (option to add more for creamier consistency)

Directions

Heat oil in a large saucepan over medium heat. Add garlic and onions, pinch of sea salt and pepper and sauté until cooked. Then add mushrooms and ginger. Saute until golden brown. Then add sweet potatoes, miso, 2 C vegetable stock and 2 C water and another pinch of sea salt. Raise heat and bring to a boil, or until the potatoes or soft. Add the broccoli, cover and cook for another 5 minutes or so until broccoli is cooked but still vibrant green. Turn off the flame.

Using an immersion blender, puree until smooth. Add coconut milk optionally to increase the texture and consistency of the soup. Sea salt and black pepper to taste. Yum! Enjoy! Oh, and you can get an immersion blender at Bed, Bath, and Beyond. Just tell your boyfriend (or girlfriend) you want one, and maybe you will unexpectedly walk in to a home cooked meal. Who knows…
